Strawberry, Bacon & Spinach Salad with Feta & Poppy Seed Dressing.

    baby spinach

  • 1 (4 oz) pkg
    crumbled feta cheese
  • 1 (16 oz) pkg
    strawberries

    apple cider vinegar

    mayonnaise

    Heat a skillet over medium heat.

    Add the bacon in batches to the skillet and cook until crispy, 3-5 minutes per side.

    Wash and dry the spinach. Wash the strawberries, trim the tops, and thinly slice.

    In a small bowl, prepare the dressing by whisking together mayo, vinegar, honey, poppy seeds, salt, and pepper.
    ½ cup mayonnaise
    2 tbsp apple cider vinegar
    2 tsp honey
    1 tsp poppy seeds

    ½ tsp black pepper

    Measure out the almonds.

    Once the bacon is cooked, crumble or chop into small pieces.

    Arrange a bed of spinach on a plate, top with the strawberries, bacon, feta, and almonds, and drizzle with the dressing. Enjoy!
